Sauvignon Rose
Farming: Certified Agriculture Biologique
Grapes: Sauvignon Rose, 15 year old vines on gravelly clay-limestone near Vopillon.
Vinification: De-stemmed and placed into the closed press to macerate for 24-48 hours followed by a gentle press over 6 to 12 hours. Transferred to fibreglass tanks then left untouched for almost two years. Bottled December 2022.
Fining: No Filtering: No Added SO2: No Production: 250 cases ABV: 15%
