Carignan Noir - Grenache Noir - Mourvèdre

  • Carignan (⅓) and Grenache Noir (⅓), 80 year old vine field blend in Périllos.  Mourvèdre (⅓), 40 year old vines on clay/limestone in Opoul. All certified organic.

  • Co-fermentation for Carignan and Grenache. All de-stemmed and put into stainless steel for 1 week. Pressed then back into stainless steel. Mourvèdre is de-stemmed and put into stainless steel for 1 week. Pressed and into foudre for 5 months. All blended February 2022, bottled March 2022.  

  • No filtering, fining, or added SO2 - 300 cases - ABV 13.5%
