Gamay d’Auvergne from 60- to 100-year-old vines from three parcels on clay-limestone and basalt soils around Glaine Montaigut, Égliseneuve-près-Billom, and Saint Julien de Coppel.
All de-stemmed and crushed then put into stainless steel tanks for two weeks. Pressed, then pressed juice is blended with free run. Aged for 8 months - ⅔ is put into six 160 litre terracotta amphoras and ⅓ is put into two 250 litre flextank eggs. Blended, then into stainless steel until bottling in October 2022.
