Certified organic and Demeter Merlot (80%), Cab Sauvignon (10%), Malbec (5%) and Carmenère (5%) all from vines around the winery in Bayas on blue clay and crasse ferrique
All de-stemmed and maceration apart for 4 weeks in stainless steel and amphora. Pressed and aged apart for two years in stainless steel, amphora, and neutral oak barrel. Blended before bottling in Spring 2024.
