Farming: Certified Agriculture Biologique
Grapes: Carignan (50%), Grenache Noir (50%). Both 80-120 year old vines from the Chateau parcel above Opoul. 
Vinification: De-stemmed but not crushed, co-fermentation in a 600 litre foudre on rollers. Maceration for 10 days. Pressed and put into used oak barrels for six months. Back into foudre for another six months. Bottled October 2020.
