Grapes: Gamay d’Auvergne, 60 year old vines from a south-facing parcel on basalt slopes around Saint Julien de Coppel.
Vinification: Grapes are crushed by foot and chilled for 48 hours, followed by slow press into stainless steel tanks. Static debourbage. Aged in stainless steel on lees for 6 months. Bottled March 2023.
