Appellation: Vin de France

Farming: Grapes are certified organic (Agriculture Biologique)

Grapes: Carignan Noir (100 years old), Syrah (20 years old) (50/50)

Vinification: Direct press, then co-fermentation in fibreglass tank where it stays until bottling in May 2023.

Fining: No Filtering: No Added SO2: No Production: 400 cases ABV: 12.5%


II080 2023

 

Appellation: Vin de France

Farming: Grapes certified organic (Agriculture Biologique)

Grapes: Lledoner Pelut (50%), Syrah (25%), Carignan Noir (25%)

Vinification: Hand harvest in August 2023. Direct press for the Carignan into fibreglass. Whole bunch co-fermentation for Lledoner and Syrah in fibreglass over 15 days. Blended mid-September and stays in fibreglass until bottling in October 2023.

Fining: No Filtering: No Added SO2: No Production: 250 cases ABV: 11.5%


ZOT 2022

 

Appellation: Vin de France

Farming: Non-certified organic

Grapes: All grape varietals, 12 in total, used to make the other wines from La Cave Apicole.

Vinification: Once all the 2022s from La Cave Apicole (Carbo Culte, Zumo, Java, Gorgorlou, etc) are dry, an amount is taken from each tank depending on the size of the tank and the distance between the two taps on the side. They are blended into stainless steel tanks where it stays until bottling in April 2023.

Fining: No Filtering: No Added SO2: No Production: 200 cases ABV: 12%
